Invite some little friends over for some chocolate Happiness Cookies and Babychinos. Here's our favourite recipe.
Makes approx 14 cookies
100g softened butter
150g light brown sugar (you can use white sugar if you prefer)
1tsp vanilla extract
150g self-raising flour
40g cocoa powder
1/2 tsp baking powder
1 egg, beaten
2 x baking trays
Electric Whisk or wooden spoon
1. Preheat the oven to 180 degrees c/gas mark 4. Line baking trays with greaseproof paper.
2. Cream the butter and sugar together by hand or with an electric whisk. When creamed, combine in the egg and vanilla.
3. Sift in the flour, cocoa and baking powder.
4. Put walnut sized pieces of dough onto the lined baking trays, about 10cm apart. (See tip)
6. Bake for about 15 mins
We added some white chocolate melts as eyes before popping the cookies in the oven, then added some smiley mouths with a small tube of milk chocolate writing icing after they were baked. You can add any decorations you like.
You can also add yummy things like chocolate chips into the mixture too if desired, about 150g should be good!
